Sarah F. Stallings,
PhD, RD, LDN
Professor, Associate Dean College of Arts and Sciences
Dr. Sarah Stallings is a Professor in the Department of Human
Nutrition at Winthrop University and serves as Associate Dean for
the College of Arts and Sciences. She received her B.S. degree
in Dietetics from Winthrop College and her M.S. in Nutrition form
Winthrop in a cooperative program with Clemson University. Her
PhD degree in Nutrition was completed at the University of North
Carolina at Greensboro; her minors were in Food Science and
Education. She is a registered and licensed dietitian.
Dr. Stallings has been teaching and conducting nutrition research
at Winthrop University for approximately 30 years. She has
also served as a consultant for the Rock Hill Dialysis Center for 8
years and for Interim Healthcare, Inc. for 3 years. Her
research interests include nutrition status, food intake and
lifestyle patterns and body composition of normal weight,
middle-aged females, restrained eating and lipid profiles of
middle-aged women. She has also been involved in research on
nutrition status and food intake patterns of participants of the
Expanded Food and Nutrition Program in South Carolina.
Currently, her research includes the relationship between plasma
homocysteine concentrations and intake of folate and vitamins B6 and
B12.
Dr. Stallings has been the President of the South Carolina
Dietetic Association, the Catawba Dietetic Association, the
Southeastern Regional Hospital Association for Dietitians, and South
Carolina Partners of the Americas Chapter. She has also served
as Chair of the American Chemical Society, Carolina-Piedmont
Chapter. She has co-authored 20 refereed journal articles, two
South Carolina Experiment Station Bulletins, four edited proceedings
of research symposia, two publications in lay magazines, over 60
published abstracts of refereed research papers presented at
international, national, regional and state meetings, and 10
curriculum guides. She has received numerous honors and awards
including the South Carolina Outstanding Dietitian of the Year,
Distinguished Service Awards form SC Dietetic and Catawba Dietetic
Associations, Elizabeth Burris Scholarship Award, Winthrop
University Distinguished Service Citations, and the Governor's Award
for Excellence in Science Awareness in South Carolina.
